He continued his post-secondary studies at Southwest Texas State University after receiving an honorable discharge, finally earning a degree in agriculture.

In 1971, Strait wed Norma, his high school sweetheart. They had two kids together. Following the death of their daughter in an automobile accident in 1986, George founded the Jenifer Lynn Strait Foundation, a children’s charity.
